Julio’s Bagels was inspired by a craving for the perfect bagel and the belief that if you can’t find one, bake one.

In 2022, Ashley Patino (owner of Pizza Bones and brains behind all things bread) applied the same principles to bagels as she did to pizza: naturally-leavened dough, freshly milled grain, and seasonal add-ons that compliment—not complicate—existing flavors.

What started as a Saturday-only Pizza Bones special soon took on a life of its own. On the quest to bake the perfect bagel (crispy on the outside, soft on the inside, medium chew), the team quickly realized Richmond’s love for bagels was too big to satisfy on Saturday mornings alone. 

We’re giving your favorite bagels a home of their own in North Side so every morning can be Saturday morning. Come say hi.

Our Team

Ashley Patino is a native Virginian.

She fell into coffee and baking while studying at Virginia Commonwealth University, working at many local prominent establishments. In 2015 she moved to San Francisco to work more, learn more, and eat more. She landed a perfectly timed stint at Tartine Bakery and Del Popolo which led to fun stages in different kitchens throughout the west coast and the US, building community through food and beverage along the way. In 2021, Ashley opened Pizza Bones in the Church Hill neighborhood of Richmond, VA. 

Noah Bowman was born and raised in Brooklyn, New York.

In 2014 he co-founded the band Diet Cig and went on to spend the better part of a decade recording and touring across the states and globally. His visible role was behind the drums, but he secretly loved ensuring that everything was working seamlessly for his team behind the scenes. In 2017 Noah moved to Richmond looking for a new home base and fell in love with the city and community he found here. When the pandemic shifted the touring landscape, he tapped into his general contracting skills and did some work for Ashley at Pizza Bones. Alongside Ashley, Noah is excited to lean into and learn something new in the food space, focusing on daily operations so that Ashley can focus on bagels.
